Hey guys! I hope you had a great weekend! I’m not sure about you, but with Daylight Saving Time ending and the weather getting chillier, I sometimes just want to snuggle up in bed with a big plate of pancakes and my favorite book. 😕 It’s all about balance, but sometimes I just need a BOOST to keep me motivated and energized.

Pennsylvania is very family-oriented and there are so many fun activities to do this time of the year. Pumpkin patches are our tradition and we always have to visit the farmer’s market for allllll da fruits and veggies! To get refocused, reset and recharged, my Mood Boosting Mango Salsa is exactly what I’m craving! This recipe is super healthy and tastes amazing!

Salsa is seriously one of my favorite go-to snacks. Sometimes I just eat it plain with a spoon lol! 😛 If you're anything like me and you prefer your salsa kicked up a notch, you are going to looooove this delicious recipe! The secret ingredient is a vegetable Veracha sauce! Many store-bought sauces and condiments are often loaded with corn syrup, preservatives, dyes and flavor enhancers. Ain’t nobody got time for that! Any food that’s processed with a bunch of chemicals isn’t healthy no matter how much (or how little) you eat of it. I usually just make my own from scratch, but not this time! Instead of using unnatural ingredients in their  BBQ,  ketchup and Veracha sauces, they use simple ingredient vegetables instead! They're also gluten free, vegan, non-GMO annnnnd come in glass bottles. Healthy and yummy! Win Win!

MOOD BOOSTING MANGO SALSA
Serves 4
Eat your way to a happy day! This mood boosting mango salsa recipe will increase your energy and help you feel your best!

Ingredients
  1. 1 cup chopped strawberries
  2. 1 cup chopped mango
  3. 1 cup red onion, minced
  4. 1 jalapeno, seeded and minced
  5. 1 cup diced tomato
  6. 1 cup chopped yellow bell pepper
  7. 1 medium avocado, diced
  8. 2 tbsp. fresh cilantro
  9. 2 tbsp. sriracha sauce
  10. 1/2 lime, juiced
Instructions
  1. In a large bowl, mix together the tomato, yellow peppers, red onion, green onion, fresh mango and fresh strawberries.
  2. Slowly mix in the ripe avocado and fresh cilantro.
  3. Squeeze the lime wedge over the salsa.
  4. Pour and mix the sriracha sauce into the salsa and serve.
